Ginger and turmeric spiced carrot soup

  • 2 tbsp coconut or olive oil
  • 2-3 small green onions, chopped
  • 750 g / 3 cups carrots, peeled and sliced
  • 1 clove garlic, minced (optional)
  • 2 cm piece peeled and grated ginger
  • 2.5 cm fresh piece peeled and grated or ½ tsp dried turmeric
  • Salt to taste (approximately 1 tsp)
  • Freshly ground pepper to taste
  • 4 cups water

With winter and chilly days around the corner, warm your heart and boost your immune system with this nutrient-dense ginger and turmeric spiced carrot soup. Ginger and turmeric are known for their antioxidant, anti-inflammatory, and antimicrobial properties, which support your immune system and fight infection. Carrots are rich in vitamins and minerals that are essential for immune health.

  • Melt the oil in a medium saucepan over medium heat. Sauté the green onions, garlic, and grated ginger for 1 to 2 minutes or just until glossy.
  • Add carrots, salt, and turmeric and cook another 1-2 minutes, stirring occasionally.
  • Add water and bring to the boil. Reduce heat, and simmer until carrots are softly cooked about 20-25 minutes.
  • Puree soup in a blender.
  • Divide soup between 4 bowls and serve warm.
