1 L sparkling water, chilled, to top up
In a blender, puree the tinned litchis and the syrup until smooth. Stir in the vanilla essence, then pour the mixture into an ice tray and freeze until firm. To make the mocktail, pop the litchi ice blocks into a large jug with the lime wedges, mint, and cherries and top up with sparkling water.
