A Quick, Nutritious Dinner for the Whole Family

As we are always so busy, preparing healthy, home-cooked meals can feel like a challenge. That’s why recipes like this Beef and Veg Stir Fry are a lifesaver. Quick, colourful, and packed with nutrients, it’s the perfect solution for weeknight dinners that need to be both delicious and nourishing. Whether you’re trying to eat healthier, support a balanced diet, or use up the veggies in your fridge, this dish ticks all the boxes.

Why Stir Fry?

Stir frying is one of the healthiest and most time-efficient cooking methods. It uses minimal oil, retains the natural vitamins and minerals of vegetables, and enhances the flavours of fresh ingredients. Plus, it’s incredibly versatile. You can mix and match proteins, veggies, and sauces based on what you have on hand or what’s in season.

Ingredients You’ll Need:

Protein & Veggies

  • 500g lean beef strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 1 small onion, thinly sliced
  • 1 cup broccoli florets
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced

Sauce

  • 2 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp sesame oil
  • 1 tsp cornflour (mixed with 2 tbsp water)

Optional Garnishes:

  • Spring onions
  • Sesame seeds

How to Make It:

Step 1: Prepare Your Ingredients

Wash and chop all vegetables. Marinate the beef strips in a tablespoon of soy sauce and a pinch of pepper for at least 15 minutes.

Step 2: Cook the Beef

Heat a wok or large pan over high heat. Add half the sesame oil, then sear the beef strips in batches until browned but not overcooked. Remove and set aside.

Step 3: Stir-fry the Vegetables

Add the remaining sesame oil, then sauté the onion, garlic, and ginger for a minute. Add the harder vegetables like carrots and broccoli first, followed by softer ones like peppers and zucchini. Stir fry for 4–5 minutes until just tender but still crisp.

Step 4: Combine and Sauce

Return the beef to the pan. Pour in the soy sauce, oyster sauce, and the cornflour-water mix. Toss everything well and let it cook for 2–3 more minutes until the sauce thickens and coats everything nicely.

Health Benefits of This Recipe

  • High in Protein: Lean beef helps maintain muscle mass and supports a healthy metabolism.
  • Rich in Vitamins: Bell peppers and broccoli provide vitamin C, while carrots offer beta-carotene.
  • Low in Calories: Stir-frying uses very little oil, making it a lighter option than deep-frying or cream-based dishes.
  • Quick and Easy: Perfect for busy households trying to eat healthy on tight schedules.
